While playing the demo (which I feel is a huge step in the right direction, I love it!) I noticed the rocky outcrop and thought how cool it would be if when you approached it, a wild Onix uncurled itself from the mountainside and attacked! Basically the idea of which there Pokemon that blend in with the surroundings, not just the standard moving in tall grass style in the demo (which I know is still in baby stages). Sudowoodo can make its appearance by looking like a tree, maybe some water types appear from behind a waterfall, (much like the story of how a Magicarp becomes a Gyrados by swimming up a waterfall) A lot of the rocky type Pokemon can blend in on the mountain side and caves. Diglet's head can look like a round rock in the ground till you hit it, Zubat hanging on the ceiling in a cave, See the running Pokemon sprinting across the plains and have to ride your bike to catch up to them ect... There's a lot of dynamics you can add to the Pokemon to make them have that extra something in the interaction. It would be a lot of work for sure, let's see if this idea gets a lot of traction or I'm just throwing another headache into the mess, haha. I think it would be a really cool aspect to go hand in hand with the "free roam world" feel and make this game stand out even more than it's promising to be! Thanks for reading and share if you think it's a good idea!
As for the specifics of these encounters, I would like to propose my ideas of wild Pokémon and their behavior: In the wild you will see families and communities of Pokémon roaming about in their respective ecosystems. You will also find solitary Pokémon, especially very rare ones or apex predators. Some species are found in nests and colonies. Many are flying or swimming in swarms. Every voice you hear in the wild belongs to a Pokémon. Normally most won't attack you immediately on sight unless for a good reason: it is territorial, it sees you as prey, it sees you as a threat and retaliates in self-defense, or, it is protecting others of its kind from danger. A healthy individual or family would either poke at you or inspect you in curiosity or simply ignore you if you are perceived as unimportant to it. If you are much stronger than another Pokémon, it likely will flee upon noticing you. When you target one, a box above its head displays showing its name, gender, condition, level, and HP and PP meters. Traces Pokémon also leave traces of their presence, mainly in the form of tracks, abandoned eggs, and distant vocalizations. Scanning a set of tracks will reveal which species they belong to, as well as where that certain individual may have gone. You could also record a sample of background noises and pick out the cries of a specific species. Should a rare Pokémon flee from battle, it may leave behind an egg, giving you a chance to raise that rare species without having to catch it.
I think thats a great idea, but I think some thing should be hidden. Like level, not showing the level or only showing the approximate level like 1-10, 25-40 or 65+. Showing it with conditions like if you have a pokemon of the same species, the level diffence between that pokemon and yours, the usual level in the area and what evolution it is. And only showing the gender of pokemon that you can easily see it like pikachu or frillish.
But the official games show the exact level of each Pokémon you encounter, as well as some of the other things you've mentioned. Evolution should be kept hidden, since it would be a surprise for first-timers. Gender should still show for the purpose of finding the right gender for breeding.
